The weather is sometimes unpredictable in the Midwest. Today was chilly and even though we still entertained in the garden this evening we were wearing long sleeves and definitely felt the chill. The fireplace is essential on nights like these....but tomorrow is supposed to be close to 100 degrees!
Tonight's menu...simple fresh fare...
The Starters:
An apricot goat cheese spread, fresh hummus, hearts of palm and carrots, a homemade vegetarian pate made with roasted potatoes, fresh rosemary, and olive oil, and a selection of olives and stuffed grape leaves...easy peasy but very tasty!
A nice selection of cheeses and a garlic onion chutney spread on crackers....
The Main Course was served Family Style....
One of my favorite Summer salads...fresh heirloom and cherry tomatoes, fresh basil, and oregano, marinated mozzarella, chunky cucumbers and an homemade italian vinagrette dressing....delish!
Edamame, Goat Cheese, and Cranberry Salad with Poppyseed Dressing....
Strawberry, Rasberry and Banana Fruit Salad...
Fresh Baked Seeded Rolls, A Quinoa, Butternut Squash, Mint Salad with Feta and Roasted Pistachio Nuts, Fresh Squeezed Lemondade with Mint and a hint of honey.... not pictured... due to time contraints...were the items from the grill... and dessert...left over Peach Berry cobbler ala mode from last night's soiree....even better the second night!
It was a very relaxing evening....I hope you enjoyed yourself today too!!
